Head Chef Job Description

As a head chef you will be responsible for everything that goes on in your employer’s kitchen. Not only will you be required to oversee all dishes from start to finish, you are also tasked with hiring and firing employees, meeting health and safety standards and dreaming up new recipes for the restaurant you work in.

Duties and Responsibilities

What Are The Role’s Main Responsibilities?

Once you become a restaurant’s head chef your duties will include:

Overall responsibility for the kitchen’s daily operations.
Liaising with the relevant companies for food orders.
Creating new dishes and menus.
Interviewing and hiring new staff.
Maintaining/raising the food’s profit margins for your employer.
Monitoring and controlling stock levels.
Ensuring correct stock rotation procedures are followed.
Implementation of health and safety procedures in the kitchen.
Estimating costs and ensuring all purchases come within budget.
Taking care of the kitchen’s accounts and creating a work roster.


What Skills Does A Head Chef Need?

You need to have a genuine love of food and a lot of energy because you have to start every shift with a spring in your step. Other necessary traits include:

Outstanding cooking skills.
Real creativity when it comes to food.
An ability to create menus that are innovative and profitable.
A deep understanding of ingredients and produce.
The capacity to work under extreme pressure.
Excellent leadership and management.
The ability to delegate tasks.


What qualifications do I need?
Many head chefs have got where they are today by training on the job and taking every opportunity for placements (or stages) in top kitchens. However, formal qualifications will undoubtedly get you to the top faster. You can work your way up the ranks by taking the Modern Apprenticeship route as well as studying for NVQs or SVQs.

Alternatively, you can study full time at college. Useful qualifications include:

City & Guilds diplomas in professional cookery
BTEC HND in professional cookery
A foundation degree in culinary arts
Health and safety and food hygiene certificates
